Apple Crumble Cupcakes

Apple Filling:
Combine apples, sugar, cornflour, cinnamon, and mixed spice in a pan over low heat.
Cover and cook for 10-15 minutes until apples are soft.
Remove from heat and allow to cool completely.
Crumble Topping:
Preheat oven to 180°C (160°C fan)/350°F and line a baking tray with parchment.
Mix flour, sugar, and cinnamon in a bowl.
Rub in the butter until the mix looks like breadcrumbs.
Spread on the tray and bake for 10-15 minutes until golden. Let it cool.
Cupcakes:
Preheat oven to 160°C (140°C fan)/325°F and line a cupcake tin.
Cream butter and sugar until smooth, then add eggs.
Gently fold in flour and spices.
Divide batter among cases and bake 20-25 minutes until done.
Once cooled, core and fill each with apple filling.
Buttercream:
Beat butter until creamy, then gradually add sugar, cinnamon, and milk until smooth.
Pipe onto cooled cupcakes and top with apple filling and crumble.
