Homemade Pickled Beets

Directions:

  1. Scrub the beets and trim the tops to 1 inch. Place them in a Dutch oven and add enough water to cover them. Bring to a boil, then reduce heat and simmer, covered, for 25-30 minutes or until tender. Remove from water and allow to cool. Peel the beets and slice them; place them in a bowl and set aside.
  2. In a small saucepan, combine vinegar, sugar, cloves, allspice, and salt. Bring the mixture to a boil and let it boil for 5 minutes.
  3. Pour the hot vinegar mixture over the sliced beets. Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld.
  4. Drain the pickled beets before serving.
